Cranberry Relish

1 - 12 oz bag of cranberries
3 medium oranges
1 large apple
1/2 cup walnuts

Core apple and remove seeds, but do not remove the peel.  Quarter oranges and remove seeds, but do not remove the rind.  In small batches, put everything through the food processor*.  Then put everything in a bowl and mix well.

This recipe made about 5 cups

*I used the shred attachment on the food processor.


I chose to make the cranberry relish without any sweetener.  I found I like the tartness of it.  If I want a sweeter taste, I can always add some Stevia or honey to it.  I think next time I make this, I will double the amount of walnuts.

It is! Had some for breakfast this morning with a bit of honey mixed in. Tomorrow I'll try some with a bit of Stevia.

I love tarty food. I don't like fresh cranberries, but maybe mixing in a can of them would be better than jello?
